My Polish Grandmother's Eggs and Onions Recipe
Healthy, economical, and really tasty...
It is now quite commonly eaten with ‘Lox’ (chopped smoked salmon).- 5-6 tablespoons olive oil
- 1 small thinly sliced onion
- a few finely chopped spring onions
- 6 large eggs boiled and chopped
- Salt and pepper to taste
- Fry the sliced onions until golden brown and add seasoning
- Set aside to cool slightly.
- Transfer to large bowl and add the spring onions and eggs and incorporate all the ingredients well without mashing the mixture.
- Chill in the fridge.
- The mixture will be fairly loose - more oil can be added if desired.
